Banana Walnut Cake


  • 1 1/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 teaspoon vanilla extract
  • 1 cup butter
  • 1 1/4 cup sugar
  • 3 very ripe bananas, peeled and mashed with a fork
  • 1/2 cup toasted walnut pieces


  1. Preheat oven to 350º. In a medium bowl, combine sifted flour, baking soda, and salt. Whisk together eggs, vanilla, butter, and sugar. Prepare a loaf pan and lightly brush with butter or spray with non-stick cooking spray.
  2. In a mixer, cream together the flour mixture with the eggs mixture. Mix until smooth then add in bananas and nuts slowly and mix until smooth which is about 2 minutes.
  3. Transfer the batter into a loaf pan and bake for 55 minutes. Insert a toothpick into the center of the bread and if it comes out clean then the bread is ready.9.19.19_1 Banana Walnut Cake9.19.18_2
